Do you know what is in your food?

No one ever told us that six years ago we Americans began eating genetically engineered food.  Mandatory labeling of  food ingredients is required in other countries but our FDA has decided we don't need to know.

What are GMOs?   Genetically Modified Organism, is a man-made organism created in a laboratory and patented by a corporation or the USDA. GMOs are created by a process called genetic engineering.

Genetic engineering involves crossing species which could not cross in nature. For example, genes from a fish have been inserted into strawberries and tomatoes. While the Food and Drug Administration insists that foods produced by genetic engineering are the same as foods from traditional breeding, their own scientists reported that, "the processes of genetic engineering and traditional breeding are different and... they lead to different risks."

Companies  are spending billions on this crazy idea.  Why?   Follow the money.  They want to own copyrights on  genes that no one else 'owns' - so that they can make billions of dollars from them..

There IS Evidence of Harm:

1. The lifespan of ladybugs was reduced to half when they ate aphids that had fed on genetically altered potatoes in Scotland, according to a London Times article (10/22/97) by Science Editor, Nigel Hawkes.The ladybugs also laid fewer eggs. Note that the ladybirds did not even eat the genetically modified food directly, as we are doing now. They ate something ELSE that had eaten  modified food.

2. A recent TV Show by PBS (Public Broadcasting) on GMO's showed how people have  created salmon several times bigger than normal salmon and are currently being farmed inland. However,  the salmon farm is currently seeking permission to farm the salmon in fenced off sections of the ocean. The problem is that if even a couple get away, they could cause the extinction of salmon.

3. Because there are no labelling laws about GMOs, danger to humans who are allergic to certain foods is guaranteed. For instance, if someone is deathly allergic to peanuts. A GMO may have a gene from a peanut in them. The allergic person could get a reaction from eating ANYTHING that contained the peanut gene. They wouldn't even know what caused it.

4. Pesticides are now going to be INSIDE the food you eat!


The sad thing is that we don't even need GMOs to produce more food. There is already 2-4 times enough food on the planet to feed everyone.

Please learn all you can on this incredible threat to life as we know it, and do your bit to stop it.

TAKE ACTION

At least find out which foods have GMOs and boycott (stop buying) them.

Ice Carving Festival


Alaska's Ice Carving Festival  attracts the world's elite ice sculptors. 
Organizers of the World Ice Art Championships said Wednesday they were in talks with 20th Century Fox, the studio distributing the sequel to the hit animated film "Ice Age 2: The Meltdown.''

The theme of the 2006 ice championships just happens to be "Ice! Camera! Action!''
A 50-foot (15-meter) ice statue of "Ice Age'' rodent Scrat would be illuminated like an aurora borealis.

The movie title would mark the entrance to a children's play area, which would be renamed "Ice Age 2: The Meltdown Kids Park.'' The main characters would be represented by towering sculptures. 

Plans include an  icy waterslide and a tunnel slide like the one depicted in the movie. There's even been talk about building an ice theater for the premiere.

The championships feature teams carving intricate works stretching as high as 30 feet (9 meters) and weighing several tons. The ice is harvested in surprisingly transparent chunks from nearby O'Grady Pond.   Read

ALASKA


You never know where publicity or free advertising, good or bad, is going to come from. 

Recently, Iranian president Mahmoud Ahmadinejad  proposed that Jews just go away,  even to  Alaska.  He isn't the first tyrant to propose Alaska as a new home for the Jews.
Mussolini was the one who changed direction northwards. Instead of exposing Berlin's urbane Jews to the rigors of the tropics, he opined that the Siberian Arctic might be a preferable hardship. Coincidentally or not, Washington soon thereafter launched plans to deposit Jews in Siberia's adjacent neighbor, Alaska - then an American territory. The fact that Alaska wasn't a state theoretically offered a technicality via which to circumvent immigration quotas for 10,000 refugees who'd be put to work in wilderness-development projects.
Again, now as then, Alaska is proposed as a dumping ground. Ahmadinejad may not give a hoot about the first attempt to unload Jews in Alaska, but for the record it ought to be noted that the well-intentioned bill, sponsored by Utah Senator William King and California Congressman Frank Havenner in March 1940, failed to save a single Jew.  Read entire article

I have heard talk show hosts and others pontificate about the rigors of Alaska and why it
would be the perfect place to send criminals for punishment (instead of a death sentence).

Well, I wanted to show you a few pictures but haven't figured out how to get them to load

The Alaska Iditerod Sled Dog Race is a big event here.
It's not uncommon to see dog mushers excercising their dogs and getting ready for that
really long race to Nome.  The Alaska Iditerod Race,  is over 1000-miles from Anchorage to Nome.
 One of the exciting pre-race events is the annual Iditarod "Fun" Raiser held at the Millennium Hotel on Friday evening before the start of the race. This year it will take place on March 3, beginning at 6:30 p.m.. The Millennium hosts a fabulous gourmet seven course dinner, followed by an auction of many unique collector items.

Here is a recipe very similar to one I use for  Teriyaki Grilled Salmon

• 1/4 cup brown sugar, not packed
• 3 tbsp. oil
• 3 tbsp. soy sauce
• 1-1/2 tbsp. minced fresh garlic
• 1-1/2 tbsp. minced fresh ginger
• 4 (4 to 6 oz. each) Alaska salmon steaks or fillets
• 1 sheet (12 x 18 inch) Reynolds Wrap® heavy duty aluminum foil
In a shallow baking dish, combine brown sugar, oil, soy sauce, garlic and ginger. Place Alaska salmon steaks/fillets in a baking dish. Turn fish over several times to coat; refrigerate 30 to 45 minutes. Remove salmon from marinade. Cook on foil sheet on medium hot grill, turning once during cooking, about 6 to 12 minutes per inch of thickness. Do not overcook.
Makes 4 servings.

HOLIDAY FRUITCAKE TRIVIA

The fruitcake has become one of the most ridiculed foods and the butt of many jokes.

Fruitcake is a heavy cake made of dried or candied fruits and nuts that are soaked in brandy or rum, often used in the celebration of weddings and Christmas.

 

The earliest recipe from ancient Rome lists pomegranate seeds, pine nuts, and raisins that were mixed into barley mash.

In the Middle Ages, honey, spices, and preserved fruits were added and the name fruitcake was first used.

Here is a new twist on fruitcake....it reminds me of an old fashioned spice cake.


Pumpkin Fruitcake

"This pumpkin fruitcake is designed for those who eschew fruitcake in any form. It is tender, nutty and only vaguely scented with rum and spice. Parenthetically, it keeps wonderfully well -- if you can keep your hands off it. I cannot!"

NGREDIENTS

2 cup seedless raisins    nutrients
1/4 cup plus 3 tbs dark rum
1 cup pitted dates, roughly chopped  nutrients
3 1/2 cups flour
1 cup unsalted butter, softened
3 cups sugar
4 eggs
1 cup pureed cooked pumpkin (canned)  nutrients
1 tsp ground cinnamon
1 tsp ground ginger
1 tsp baking powder
1/2 tsp salt
1 tsp baking soda
1 1/4 cups buttermilk
1 cup walnuts, chopped    nutrients
finely slivered peel of 1 orange
finely slivered peel of 1 lemon
1/2 cup orange juice
Confectioners' sugar

HOWTO
Place raisins in bowl and add the 1/4 cup rum. Cover and let stand several hours or overnight.

Preheat oven to 325F. Butter and flour a 9 cup bundt or tube pan (or 3 medium loaf pans). Set aside. Sprinkle the dates with 1 tbs of the flour. Set that aside.

Beat the butter in a large bowl of an electric mixer until light. Slowly beat in 2 cups of the sugar. Add the eggs, one at a time, beating thoroughly after each addition. Beat in the pumpkin, cinnamon and ginger.

Sift the remaining flour with the baking powder and salt. Combine the baking soda and buttermilk. Using a wooden spoon, stir the flour mixture into the pumpkin mixture in three parts, alternating with thirds of the buttermilk mixture. Stir in the reserved raisins and rum. Stir in the dates, walnuts, orange peel and lemon peel.

Spoon the batter into the prepared cake pan. Bake until a toothpick inserted in the center comes out clean, about 1 1/4 hours. Cool on a rack for 10 minutes. Unmold.

Meanwhile, combine the remaining 1 cup sugar with the remaining 3 tbs rum and the orange juice. (I found it was easier to warm these ingredients over low heat while stirring, until the sugar was dissolved) Brush this over the cake until it is moist but not wet. Sprinkle with confectioners' sugar before serving. Serves 8-10

HEALTHY LIVING and HOLIDAY RECIPIES  seems to be a paradox,
but that doesn't have to be the case.  Some of our favorite <b>holiday</b> foods
 actually contribute to healthy   living.

Cranberries  for instance.  For over 60 years, Ocean Spray has been actively researching the cranberry
 and their other products,  to understand their role in maintaining good health. Early research determined
 that compounds in cranberry, called proanthocyanidins or condensed tannins, prevent certain bacteria
from sticking to the urinary tract, If bacteria can’t stick, they cannot cause infection. This anti-stick
 mechanism of cranberry is key to its urinary tract health benefits.

The cranberry is one of only a handful of major fruits native to North America. Others include the blueberry and Concord grape. Cranberry Fun Facts

Here is one I particularly like:


Cranberry Chutney
    
Ingredients:

1 16-ounce can Ocean Spray® Whole Berry Cranberry Sauce
1/2 cup raisins
1/2 cup peeled, diced apple
1/4 cup + 2 tablespoons sugar
1/4 cup + 2 tablespoons vinegar
1/8 teaspoon allspice
1/8 teaspoon ginger
1/8 teaspoon cinnamon
dash ground cloves

Directions:

Combine all ingredients in a medium saucepan. Cook on medium heat, stirring occasionally, until apples are tender and sauce has thickened slightly, about 30 minutes. Makes about 2 1/2 cups.

PER SERVING: Cal. 33, Fat Cal. 0, Protein 0grams, Carb. 9grams, Fat 0grams, Chol. 0mg, Sodium 6mg.

Does a Cranberry Scone sound good to you?  Here is a yummy and  healthy version:

Cranberry-Walnut Scones   

2 cups whole-wheat flour
1/3 cup natural cane sugar
2 teaspoons baking powder
1/2 teaspoon ground cinnamon
1 cup dried or fresh chopped cranberries
1/2 cup chopped walnuts
6 tablespoons ghee or butter, melted   
1 large egg, slightly beaten
1/2 cup reduced-fat (2 percent) milk or soy milk 
1 1/2 teaspoons vanilla extract

1. In a large bowl, combine flour, sugar, baking powder, cinnamon, cranberries, and walnuts. Toss together lightly to mix. In a medium bowl, whisk together melted ghee or butter, egg, milk, and vanilla extract, then pour all at once into flour mixture. Mix lightly, using as few strokes as possible, until dough clings together.
2. Preheat oven to 350°. Turn out dough onto a lightly floured surface. With floured hands, pat dough into an 8-inch round, about 1 1/2 inches thick. Cut round into eight pie-shaped wedges and place on an ungreased cookie sheet. Bake until lightly browned around the edges, about 20 minutes. Cool on a baking rack.
